The foundation of excellent wine service is knowledge. This includes understanding different wine regions, grape varieties, production methods, and, crucially, the specific selection available onboard. There are various levels of wine courses you can embark upon to improve your knowledge, the WSET (Wine and Spirit Education Trust) courses are popular and internationally recognised.


Proper Storage & Handling

A good understanding of the yacht’s wine cellar is essential; knowing the inventory inside out enables crew members to make informed recommendations and descriptions to guests. The crew should pay meticulous attention to the cellar’s conditions to guarantee that each bottle is served at its best and maintain the perfect temperature, humidity, and stability to ensure the preservation of the wine.

Presentation & Decanting

There are certain practices that are deemed as correct when presenting a bottle of wine, such as displaying the label towards the guests when you pour and allowing for tasting, etc.
Understanding the art of decanting is also crucial, as this allows the wine to breathe, but it is not always essential. Practice decanting the wine before the season starts so that all service crew are familiar with the process as dome decanters can be tricky to handle and pour from.

The technique of pouring wine also requires some skill, especially onboard a moving Superyacht.

The Rise Of Savoury Cocktails: Is Savoury The New Sweet?

This might be a peculiar trend, but savoury cocktails are allegedly soaring in popularity this year. Learning how to balance the elements of flavour – sourness, bitterness, sweetness, spiciness, saltiness — is one of the fundamental tenets of both cooking and mixology. These new cocktails are certainly evident of experimentation!

In this article, we examine the quirky and innovative trend to the cocktail landscape, and also share a few select recipes too. You never know, your future guests onboard could be hooked!

When Did This Trend Begin?

This year, in 2023, savoury cocktails have grown in popularity this year.

Flavours sourced from (for example) parmesan, mushroom, and tomato have working their way onto drinks menus and into classic beloved cocktails.

There’s already the classic Bloody Mary that’s been a favourite for a long time (as well as its many offshoots, including the Red Snapper), so savoury tastes aren’t necessarily brand new to the scene. Of course, Dirty Martinis and Spicy Margaritas have always been there – and now there’s plenty of room for exploration! Only this year, there have been multiple videos (mainly on Instagram) about adding parmesan on top of an Espresso Martini. This kick-started the viral drinks trend: the Parmesan Espresso Martini.

Odd as it may initially seem, pairing such flavours isn’t unheard of. In Latin America, people have long-enjoyed combinations of Cafe con Queso and Chocolate con Queso, so naturally it’s time others around the world started to test their tastebuds!

What Recipes Are Out There?

1. Cold Pizza

Savoury cocktail - Cold Pizza

Inspired by the margarita pizza and the iconic margarita, the Back Room at Double Chicken Please (a bar in New York) experiments with craft cocktails like this one.

Ingredients:

  • 30 ml Cheese & Burnt Toast Tequila
  • 10 ml Lime-Basil Cordial
  • 5 ml Oolong Tea Honey
  • 40 ml Tomato Water
  • 15 ml Egg White

 

2. Pho-King Champ

Savoury cocktails - Pho-King Broth

This one’s a savoury, unami-flavoured shot, interestingly made with broth.

Ingredients:

  • 2/3 ounce Absolut Elyx vodka
  • 1/4 ounce Dry Sack 15-year-old oloroso sherry
  • 1 ounce pho broth
  • 1/4 ounce lime juice
  • 2 drops mineral saline
  • Garnish: cilantro leaf

3. Savory Hunter

Strange enough, this one is made with ingredients you’re probably more likely to fetch from the kitchen than behind the bar.

Ingredients:

  • 4 or 5 cilantro sprigs
  • 1 1/4 inch Thai chili slice
  • 3/4 ounce fresh lime juice
  • 3/4 ounce cream of coconut, preferably Coco Lopez
  • 2 ounces lemongrass- & makrut-infused gin
  • 2 drops mineral saline
  • 5 drops fish sauce (preferably Red Boat)
  • Garnish: Thai chili and makrut lime Leaf

 

4. Japanese Cold Noodle

This is another one from the Back Room at Double Chicken Please, inspired by a bowl of Japanese cold noodles and a piña colada.

Ingredients:

  • 40 ml BACARDÍ Superior
  • 25 ml Coconut Syrup
  • 30 ml Pineapple Juice
  • 15 ml Cucumber Juice
  • 10 ml Lime Juice
  • 1 Dash Sesame Oil

 

5. Savory Lion’s Tail

Savoury cocktails - Savory Lion's Tail

Ingredients:

  • 2 ounces bourbon
  • ½ ounce allspice dram
  • ¼ ounce freshly squeezed lime juice
  • ⅛ ounce simple syrup
  • 2-3 dashes aromatic bitters
  • Ice
  • Orange peel for garnish (optional)

So, that was just a short list of the savoury cocktails out there – just a little saltier, a little richer, and a little earthier than what we might be used to.

UKSA: New Superyacht Stewardess & Steward Training Course

In response to the industry’s growing need for highly skilled entry-level interior crew, UKSA is introducing an enhanced Superyacht Stewardess and Steward Course. SYR Blog: What Shore-based Roles Are Available For Captains?

Welcome to a new series of blogs created in partnership with SYR and Superyacht Content. As leaders in the recruitment of shore-based positions across the yacht industry, SYR Shoreside Superyacht Recruitment works with crew coming ashore on a daily basis.

What to consider when coming ashore?

If you’ve spent a career at sea, coming ashore is likely going to be one of the biggest steps that you make in your working life. Having travelled the world, working with countless owners and crews, suddenly your feet are on dry land and you’re putting down roots. It’s a big challenge and we want you to be prepared.

There are several things to consider before going land-based. These include defining what kind of job you want to have, gaining financial advice with a company such as CrewFO, reconnecting with interests and hobbies, taking time to practice self-care and allowing plenty of time to readjust to life on land.

Shorebased roles for a captain

The role of Captain is achieved usually as a result of years of service, climbing the ranks through other onboard disciplines before being trusted by an owner to take control of their vessel. Rarely do with see a Captain coming ashore with less than around 15 years of experience under their belt.

Captains offer a host of skills that would fit a broad range of roles at the most senior levels.

Captains usually exhibit excellent organisational skills, the highest levels of customer service and a hugely broad understanding of how a vessel operates such as crew management, project management, financial management and more. They are also heavily exposed to owners and the UHNW community, building strong networks within the top 1% and being an asset to employers across the yachting sector


Roles To Consider

As a Captain, it’s likely you’ve one of the largest pools of potential roles available to you when coming ashore. Here are a few roles that you could consider:

Yacht Manager (€6,000-€8,000/month)
Operationally managing a number of yachts across crew, finance, ISM, refit and more

DPA (€7,000-€9,000/month)
Supporting a fleet from ashore, being the round-the-clock contact for concerns, issues and challenges with your fleet

Yacht Broker (€100,000+/year)
Your experienced client side could make you a great broker, given the network you’ll have developed and the relationship-building experience you’ve gained through your career, not to mention your technical knowledge of yachts

Sales Manager (Up to €100,000/year)
As mentioned above, relationship-building experience is key to sales success and you’ll have this in abundance

Fleet Manager (€7,000-€9,000/month)
A step up from the role of Yacht Manager, at the Fleet Manager level you’ll be overseeing the goings-on of the fleet, working with them to ensure operational stability and continuity

Marina Manager (€6,000-€9,000/month)
Marina management requires discipline, leadership, management and operations. All skills that a captain will have in abundance. A great role as you’ll still engage with yachts and other captains daily

Managing Director (€100,000/year or more)
If you can lead a yacht, chances are you can also lead a business. We see Captains go on to top-level leadership roles very regularly. Whilst not always your first role when coming ashore, this is a role you could quickly move into.

Periodic shipyard periods, where extensive maintenance and upgrades take place, are an essential part of maintaining a Superyacht to the highest of standards. For Superyacht crew, preparing for the shipyard period is a complex yet essential task that demands meticulous planning and execution.


Create A Detailed Plan

Before the shipyard period begins, the crew will typically create a comprehensive plan that outlines all the work that needs to be done. Usually, this plan begins as a list of issues that have been raised throughout the season, from engineering hiccups to fixes needed in the interior. This plan should include maintenance tasks, upgrades, and repairs. The crew will collaborate with the yacht’s management and the shipyard to establish a clear timeline and objectives. Having a detailed plan in place ensures that every task is accounted for and executed systematically.


Arranging Contractors & Crew Duties

Having the right Project Manager and contractors for an extensive shipyard period is essential but the yacht’s crew is the most valuable asset during the shipyard period. With inside-out knowledge of the yacht, the crew will advise external contractors of the work that needs to be done and should monitor visitors to the yacht. Planning well ahead of time which companies you will utilise to assist with the refit is essential, especially in busy shipyards where many yachts are needing similar work.

This should be done well in advance, and any necessary items should be ordered in a timely manner to prevent delays. Zero-Emission Catamaran Collaboration: Cambridge Uni & Propulsion House

Propulsion House Pulling-e and Cambridge University’s Riviera Racing Team have joined forces to collaborate on the development of a zero-emission racing catamaran. This partnership was initiated after the Monaco Smart Yacht Rendezvous earlier this year. This project’s objective is to demonstrate the potential of hydrogen as a sustainable solution for the yacht industry, which will take place at the Monaco Energy Boat Challenge scheduled for July 2024.

The Monaco Energy Boat Challenge is a platform that highlights innovation and sustainability within the yachting sector. Participants are encouraged to explore cutting-edge technologies, materials, and alternative propulsion systems that can reduce environmental impact while maintaining high-performance standards. The event will feature more than forty international teams from around the world competing in speed, agility, and endurance tests.


About The Catamaran

Heikki Bergman, the CEO and Design Manager at Pulling-e, expressed his enthusiasm for the collaboration, emphasizing that the team’s efforts in creating a specialized and innovative design tailored to meet the challenges of this project have been exhilarating. He sees this initiative as a pioneering step in advancing sustainable maritime technology and eagerly anticipates the opportunity to showcase the results in Monaco:

“Creating a holistic and tailor-made design for the team has been exciting, pushing the boundaries of innovation to create something unique, purpose-built and engineered to meet the demands of this Challenge. The catamaran racer, a collaborative effort between the university and the engineering firm, incorporates a propulsion system developed by Pulling-e. This system utilizes a hybrid power source that feeds an electric motor and directly drives a pulling-type propeller located within the underwater pod unit. This design ensures that the propeller operates in an undisturbed water field and facilitates gearless power transfer.


Cambridge Workshops

The propulsion system will be transported to the team’s workshops in Cambridge for comprehensive real-world testing under various conditions. Subsequently, Pulling-e’s team will verify the component’s performance through full-scale testing in their workshop.

How To Create A ‘Spooktacular’ Halloween Experience Onboard

Vampire 🦇

Preparing a vampire-themed Superyacht do-over doesn’t have to be a pain in the neck.

Vampire Tablescape Ideas

Aim for black and red, fit for Dracula’s Gothic banquet. Drape some black lace over a red tablecloth and decorate the table with black candlesticks for an eerie ambiance. Black silk flowers (or real roses) will be a nice a ddition. Pair basic black napkins with red ribbon, and decorate the chairs with red pillowcases and cheesecloth.

  • 1 ½ ounces vodka
  • 1 ounce Chambord
  • ½ ounce 100% unsweetened cranberry juice (not sweetened or cranberry juice cocktail)
  • ½ ounce fresh lemon juice
  • ½ ounce grenadine
  • Granulated sugar and additional grenadine, for the sugar rim (optional)
  • 1 small dry ice cube (optional)

Stick to red foods: tomatoes, cranberries, roasted red peppers, beets, etc. A beef tenderloin in a blood-red Merlot sauce would be a real treat. Blood-red beverages are essential (add your own labels with the various blood types).

Black and purple would be a great colour combination! Drape some cobwebs over candles, make use of dry ice for extra spookiness, and display dark-coloured flowers. Leaving a broomstick in the area won’t go amiss.

  • 3 fl oz Homemade Blackberry Shimmery Liqueur 90 mL, chilled
  • 1.5 fl oz apple juice 44 mL, chilled (or apple liqueur)
  • 1 fl oz lemon juice 30 mL
  • ¾ fl oz simple syrup (adjust for a sweet or less sweet taste)
  • 2 tsp grenadine
  • Ice
  • Dry ice finely crushed (optional)

Please note: It’s a straightforward recipe but make sure to plan ahead to make the blackberry liqueur 1 week in advance. However, if you have a sous vide, this can be done in 2 hours.

Toffee apples are a classic halloween snack

Toffee apples and Witches’ Fingers are a simple treat. Pair a Melted Witch Fruit Dip with fruit slices or pretzels – and place half of an Oreo cookie on top, then a Hershey’s Kiss so it looks like a witches hat. You can also turn soups and drinks (alcoholic or otherwise) into a witchy brew by grabbing a cauldron for a container.

Some witches’ hats are a staple – and some striped stockings/tights will give that Wicked Witch of the West vibe. If you’re feeling goofy, grab one of those crooked noses to put on!

Pumpkin soup is a classic, and Pumpkin fondue nachos is a fun way to make use of a hollow pumpkin. For a sweet treat, go for pumpkin pie. As for drinks, you can put spins on popular cocktails like the martini and the old fashioned. Of course, if there’s too much squash going around, opt for warming spices like cinnamon, nutmeg, and ginger.

Ghost 👻

Don’t give up the ghost on your Halloween theme just yet.

Going for the colour white is obviously the go-to. Paint small faces on candles, and you can even purchase (or make) a ghost train to go up the middle of the table so you can add various snacks to each compartment. Make a little consortium of ghosts out of cheesecloth, and fabric-stiffening and draping liquid, then slightly inflated balloons taped to tin foil “arms” sitting in a large cup or vase.

  • 1 oz. coconut rum
  • 1 oz. vodka

Whether you’re going for marshmallow, mash potato, meringue, cream, or anything malleable like that, it’s an easy task to mash it together to form the shape of a ghost on top of whatever dish is going out. Dip some fruit in white chocolate and draw on a face, for a snack. Ghost Oreo Balls are pretty cute, as well.
